Apricot Coconut Balls

This tasty little treats are very simple to prepare – you just need to make sure you have some cashew nuts soaking in the fridge overnight if you’re planning on making them. These Apricot Coconut Balls are great to have in the pantry for something to nibble on when you’re feeling a little bit peckish, or to take to work as a snack.

Nutrition Information

It can be difficult to find healthy snacks for kids in the supermarket that don’t have long lists of added preservatives, artificial colours and too much sugar. These Apricot Coconut Balls are made up of four natural ingredients and make a great healthy treat. As the balls are packed full of dried fruit and nuts they are very nutrient dense, so it’s best to enjoy one or two at a time.

Ingredients

Makes around 20 balls:

1.5 cups unsalted unroasted cashew nuts

1.5 cups desiccated coconut

5 fresh pitted dates

1/4 cup dried apricots (roughly chopped)

Method

1. Place the cashews in a bowl and cover with cold water. Refrigerate and allow to soak overnight

2. Once the cashews have soaked, place them in a food processor with the coconut

3. Pulse to combine, and then add one date to the mixture at a time

4. Once all of the dates have been added, the mixture should stick together well when pressed – if it doesn’t hold you may need to add 1 or 2 more dates

5. Transfer the mixture to a bowl and stir through the dried apricot

6. Use your hands to roll the mixture into small balls

7. Store in an air-tight container, the balls will keep for around 5 days

Tips & Tricks

If you’re looking for something different, try adding sultanas, rather than dried apricots to the recipe.
